Meatloaf is one of my favorite fall back recipes during times where it feel like we have something going on every day of the week. Ideal for assembling in advance I like to mix up this recipe and store in the fridge for a couple of days so I can just toss it in the oven as I walk through the door.
This comfort food recipe combines some of my favorite things – Hot Peppers, Bacon, and Hickory Farms. With just a touch of Hot Pepper Bacon Jam from Simply Hickory Farms this bacon meatloaf recipe is a combination of sweet and smokey flavors that everyone will love.
Hot Pepper Bacon Meatloaf Recipe
Preheat your oven to 400 degrees. Start out with your meatloaf basics – ground beef, onions, breadcrumbs, and an egg. Grab a bowl that is large enough to mix all the ingredients and an oven safe dish that you can cook the meatloaf in. [I’ll give credit to my husband’s technicality that meatloaf should be cooked in a loaf pan, but I don’t like how it sticks to the metal and would rather use a glass baking dish].
Crack the egg and toss everything together into the mixing bowl. At this stage things will be a bit dry so to give some texture we added in 1/3 cup of the Hot Pepper Bacon Jam. You can add more, but taste the jam before going over so you can gauge what level of heat you want in the finished meal.
You could use a spoon to mix, but whats the fun in that? Get in there with your hands and mix everything together. Once it is well combined, shape into a loaf and place in a pan to cook. Toss in the oven (or cover with plastic wrap till you are ready to bake). Right before you bake use a pastry brush to drizzle a touch of Hot Pepper Bacon Jam on top. Cook for 40 minutes.
Cut into 3/4″ slices and serve along with your favorite sides. We made some mashed potatoes and pan seared asparagus.
I love how flavorful the bacon jam is and there was no need to add extra bacon (and a ton of grease) to the top of the loaf before baking. What are your favorite additions to meatloaf recipes?
