30 Minute Recipe: Bacon Pork with Brussel Sprout Hash

When the work week is go-go-go it’s hard to make dinner plans that involve more than grabbing something  when running from one place to another. When I have a calm night at home the last thing I want is to have to make an elaborate meal the dirties up half the kitchen – which is why meals that are ready in 30 minutes or less are perfect for me.

Using Smithfield® Marinated Fresh Pork, I was able to whip up this delicious dish in less than half an hour AND have left overs for lunch this week. Perfect for any night of the week, Smithfield Marinated Pork is available at Safeway and comes in several delicious flavors that can be tossed into the oven or on the grill for a quick meal.

I used Applewood Smoked Bacon Pork Loin Filet for my dish because bacon is my favorite compliment for the rich earthy flavor of brussel sprouts.

Bacon Pork with Brussel Sprout Hash

Preheat your oven to 375 degrees and place the pork by itself in a glass baking dish. Smithfield does all the hard work ahead of time, marinating and stuffing the pork with Applewood bacon.

While the oven heats up, prepare the brussel sprouts by washing and finely chopping them. Cut off the brown ends and throw them away. Toss the brussel sprouts into a mixing bowl and add red wine vinegar and olive oil. Mix together.

Once the brussel sprouts are well coated, add in a 1/4 cup candied pecans and a 1/4 cup dried cranberries. Spread the brussel sprout mixture out across a shallow sheet pan and place it and the pork together in the oven for 30 minutes.

After 30 minutes of cooking, confirm that the meat has reached the appropriate temperature. Pork should be at least 150 degrees when done. Allow the pork to rest while you plate the brussel sprouts.

Slice into 1/4 inch pieces and serve on top of the roasted brussel sprout hash. If you planned for any other sides, dish those up as well (mashed potatoes are amazing with this meal).

I love how the bacon compliments the sweetness in the cranberries and pecans, and how the rich flavor of the brussel sprouts really comes out alongside the seasoning of the pork. When you use Smithfield Pork as the star of your meal, you don’t have to sacrifice flavor for time. You get real flavor, real fast!
