Homemade Quinoa Breakfast Bars

I have a hard time getting up early enough in the morning to have time for a proper breakfast, but if I don’t eat something I’m starving within an hour of getting into the office. I typically transition back and forth from yogurt to protein shakes as my breakfast meal that I can eat either on my drive to work, or immediately upon arriving at the office.

Grab and go breakfast bars are convenient, but I’m not a fan of how much sugar usually goes into the prepackaged options. As a heavy coffee drinker its bad enough that I need to rely on caffeine to get my day rolling so adding sugar to the mix doesn’t help.

These easy to make Quinoa Breakfast Bars are my favorite new fast breakfast option. I can mix up a batch over the weekend and prepackage them in sandwich bags so I can grab them as a I head out the door in the morning.

Ingredients

2 cups cooked quinoa
2 cups oatmeal (I used rolled oats)
1/2 cup walnuts
1/2 cup chocolate chips
1 cup apple sauce
1/2 cup honey
2 tbsp flax seed
2 tbsp cinnamon
1 tbsp nutmeg

1. Pre-heat the oven to 400 degrees.

2: Combine all the ingredients in a large bowl. Mix until they appear well combined – a wooden spoon is best for this step.

3. Spoon the mixture into a well greased 9×13 baking sheet. Push the batter firmly into the corners so that you cover the entire pan.

4. Bake for 15 minutes or until brown. Let the bars cool in the pan.

5. Once cool, carefully flip the entire pan over onto a cutting board covered with wax paper. Cut the bars into 3″ x 2″ sections and store in an airtight container. After cooking I like to allow the bars to dry out overnight by leaving the lid off the container. If you like more chewy bars, put the lid on immediately.

    These look great. I’m always looking for new ways to use quinoa and I think I would really enjoy this.
